We recommend having 3 backups - which balances the safety of more copies and the difficulty in managing many copies. Those copies should be backed up on a set schedule (and checked for accuracy on a schedule as well, as the Pixar team discovered!) and stored in multiple geographic locations. Cloud storage often helps with geographical distribution and ensuring your backup copies aren't in the same room or on the same systems as your working copy will help avoid problems.
